A large santoku chef's knife rests on a butcher block surface.  A wood butcher block cutting area is ideal for sharp knives because the wood won't dull the edge of the knife too quickly.  Although sharp knives will leave marks in the butcher block surface when used for cutting and chopping, the wood can be sanded and sealed again to renew it.
